Warm chicken salad in Asian-style
October brings with it that familiar nip in the air. Winter is FINALLY approaching and it’s time for some warm salads that make for a comforting yet light evening meal. Here’s one of my favourites. Try out the recipe of Asian-Style Chicken Salad which make your winters a little warm.
Ingredients:
1 cup boneless chicken (cut into strips)
2 tbsp sesame oil
2 tsp dark soya sauce
Black pepper powder to taste
5 cloves garlic, finely chopped
1 stalk fresh lemongrass, cut into large pieces
2 large pieces star anise
1 cup carrots, cut into juliennes
1 cup mixed coloured capsicum, cut into juliennes
Salt to taste
Black pepper powder to taste
¼ tsp chinese 5 spice powder (Available in market)
Method:
1. Marinate the chicken in 1 tablespoon oil, soya sauce, pepper, garlic and lemongrass and keep aside for 10 minutes.
2. Heat a wok over a high flame and add remaining oil. When oil is hot, add star anise and stir fry for 3 to 4 seconds. Now add chicken with marinade and stir-fry till chicken is just cooked.
3. Using a fork, remove and discard lemongrass. Add vegetables to the wok and stir-fry for 1 more minute. Toss salt and pepper and mix well.
4. Serve hot, sprinkled over with chinese 5 spice powder.
