Nutrition-rich smoked chicken and lettuce salad
At the start of 2014, let’s pledge to eat healthy with some light and refreshing recipes that’ll help detox our bodies. Getting rid of all the junk, chocolate and cream-laden stuff is a great idea towards practicing a healthy lifestyle. Let’s peep into our kitchen and look for what difference some ingredients can make to our lifestyle.
Quick and easy smoked chicken and rocket salad in citrus dressing
Ingredients:
A few slices of smoked chicken (store bought and shredded)
A few rocket leaves
A few leaves of lettuce
A handful of walnuts
Dressing
Fresh juice of 1 orange
2 tsp orange rind
1 tsp mustard (grainy)
1 ½ tbsp jaggery (melted)
Salt n pepper to taste
2 tbsp extra virgin olive oil
Method:
1. Put all the above ingredients in a bottle except walnuts and shake well to emulsify.
2. Arrange the smoked chicken, rocket and lettuce leaves in a salad bowl and drizzle the dressing.
3. Add walnuts and toss. Serve.
Tip: Keep the lettuce and rocket or all salad leaves in ice water for 5 minutes for fresh and crisp leaves, anything longer and they will become limp. Always use a salad spinner to get the excess water out of the leaves else it thins out the dressing losing flavour.
Power-packed spinach juice
Ingredients:
A few leaves of spinach
1 apple
3 – 4 slices pineapple
A pinch of black salt
Ice
Blender
Method:
Blend all the ingredients in a liquidiser with some ice and serve chilled for a sweet and healthy juice.
Tip: All juices become coloured water if not consumed within a few minutes. This quick and easy juice has iron and natural sweetness from apple with a tinge of acidity that help balance out well along with the pineapple.
