Delicious, low calories grilled chicken

My husband’s going the healthy way, and in an attempt to get rid of the extra bulges he’s decided to go on a diet. According to his new diet routine, one piece of chicken and a bowl of soup will suffice for dinner. On Monday morning, he woke up with newfound vigour and brought two kilos of chicken. So far, so good. But the foodie that the hubby is, he wanted a different kind of grilled chicken every day. And, I am the one who had to come up with new recipes for grilled chicken on a daily basis. So, I experimented with this simple grilled chicken made only with salt and pepper. It turned out well and was even appreciated by my overly critical hubby. So, here’s sharing the recipe for you guys to try.

Ingredients:

1 chicken breast (you can also use leg pieces)
1 tsp adrak lasan paste
1 tsp salt
1 tsp pepper
2 green chillies
½ tsp black mustard seeds
2-3 curry leaves
Oil (You can use olive oil)

Method:

1. Wash and clean the chicken breast and with a knife make identical slits.

2. Marinate the chicken in adrak lasan paste, salt, pepper and two slit green chillies.

3. It is best to rub the chicken piece with the masala so that the chicken is covered well with it.

4. Keep the chicken aside for an hour.

5. Heat a non stick frying pan and add 1 tsp of oil.

6. Put ½ tsp mustard seeds and curry leaves and let them splutter.

7. Add the chicken piece in the pan and cover. Let it cook on slow flame for around 3-5 minutes or till the chicken begins to turn golden brown.

8. Once done, change sides and add ¼ glass of water so that the chicken cooks in the steam. Cover the pan and let it cook till chicken is well done and turns an even golden brown colour.

Note: You can grill the chicken breast in a pre-heated oven on 180 degree celcius for approximately 15-20 minutes, but I prefer the stove method where we can add the mustard seeds and curry leaves too. They add a unique flavour to the chicken.
