Nutrient-rich lightly fried fish with cheese
Fish is one form of meat that is packed with health benefits and scores high on the nutrition quotient. A good source of protein and Omega 3 fatty acids, fish is also low in fat content, and is thus a preferred option for dieters. So, here’s a recipe of lightly fried fish with cheese that you can enjoy with bread and mashed potatoes or rice and stir fry veggies.
Ingredients:
1 full fish (preferably pomfret)
Salt and pepper as per taste
For Stuffing:
1 small cube grated cheese
2 green chilies, chopped
1-2 tbspn finely chopped coriander
1 tbspn oil
Salt and pepper
Finely chopped spring onions for garnishing
Method:
1. Clean the fish and make a horizontal slit in the middle of the belly. Make light vertical slits on its skin as well.
2. Marinate the fish in salt and pepper for 1 ½ hour.
3. Meanwhile grate the cheese and mix it along with chopped green chilies, coriander, salt and pepper. Mix all the ingredients well.
4. Stuff this mixture into the slits made in the fish.
5. In a non-stick pan add oil . Now put the fish in the pan.
6. Cover the pan with a lid and let it cook on medium flame.
7. After one side is done, turn the fish and cook the other side in the same way.
8. After the fish is well cooked from both sides, garnish with finely chopped spring onions and serve.
