Delicious creamy chicken baked dish covered with a layer of cheese

What gets your little ones lured into eating a healthy home cooked meal? A layer of melting cheese, isn’t it? Try cooking up veggies with a few pieces of chicken, top it with white sauce and shred a generous layer of cheese. This creamy, cheese-filled dish is appetising enough to make your kiddos eat till their tummies are full. And the bonus is that you won’t have to run behind them to feed them. So, here’s the recipe of a baked chicken dish with crispy veggies that your little ones will not be able to resist. And there’s a little secret too, you can make this one without any baking! Astonished? Read on to know how.

Ingredients:

¼ kg boneless chicken
3-4 baby corns, cut slant
1 carrot, cut slant
1 capsicum, cut slant
A handful of green peas
1 tsp oregano
1 tsp chilli flakes
1 tsp parsley
1 full tbsp schezuan chutney (ready made)
Green chillies (as per taste)
Salt and pepper according to taste
A handful of coriander, chopped
Cheese for garnish

For white sauce:

1 tsp butter
2 tbsp maida
Salt and pepper according to taste
Little milk & water
Tip: You can also use vegetable stock or chicken stock instead of water
To make white sauce: Mix together butter, salt, pepper, maida and some milk. Stir till the mixture becomes smooth. Add some water for consistency.

Method:

1. In a non-stick saucepan, put a little oil and heat on medium flame. Add the oregano, chilli flakes, parsley, salt and pepper. (You add less or more seasoning depending on your taste.)

 

2. Put the cut veggies into the pan and sauté. Cover and cook on slow flame. After it’s cooked, keep aside.

 

3. In the same pan, take oil (1 tbsp) and one tbsp full of schezuan chutney. Add the boneless chicken in the pan and cook till done. Keep in the pan.

 

4. In another pan make white sauce and add green chillies (as per taste).

 

5. Put veggies and coriander in the first pan and spread over the chicken. Spread the white sauce proportionately to cover all the chicken and veggies.

 

6. Shred cheese generously on the chicken. Sprinkle chilli flakes and oregano. Cover the lid and cook on slow flame till the cheese melts.

 

7. Once it is cooked together for a while, it will set just like a baked dish and you can then cut it into pieces and relish.
