While most households will be preparing to make the customary Puran Poli on the auspicious occasion of Gudi Padwa, we’ve got you this new yet traditional recipe that you can make in a jiffy. If you’ve woken up late and are looking for an easy way out, here’s the recipe of til gur roti that’s stuffed with iron-rich jaggery and til that makes for a simple yet decadent dish. The flavours are complex and the procedure easy, so that you can get back on track right in time.
Ingredients:
1 ½ cups whole wheat flour (gehun ka atta)
6 tbsp grated jaggery (gur)
1 tsp sesame seeds (til)
2 tbsp melted ghee
a pinch of salt
2 tsp ghee for brushing
Method:
1. Combine the jaggery with two tablespoons of water in a pan and cook over a slow flame till the jaggery dissolves. Cool completely.
2. Combine the wheat flour, melted jaggery, sesame seeds, ghee and salt and knead well into a firm dough, using enough water.
3. Divide the dough into six equal portions.
4. Roll out each portion into a 125 mm. (5″) diameter circle.
5. Heat a tava (griddle) and cook each roti over a medium flame till both sides are golden brown.
6. Brush each roti with a little ghee.
7. Serve hot.
