Recipe: Scrummy Spaghetti Napolitana

Looking for an easy dinner recipe? How about giving the traditional Indian roti sabzi a miss and indulging in some spaghetti instead? Here’s a quick, easy and nutritious Spaghetti Napolitana recipe for a scrumptious meal.

Ingredients:

2 tbsp olive oil
1 large onion, finely chopped
A pinch of castor sugar
800 gms canned tomatoes
1/4 tsp crushed chilli flakes, or to taste
400 gms spaghetti
450 gms jar roasted red or mixed peppers, drained and cut into slices
50 gms stuffed green olives, rinsed, drained and halved

Method:

1. Heat the oil in a pan and add the onion and sugar. Let it cook for 5 minutes or until softened. Meanwhile, put the tomatoes into a food processor or blender to make a purée.

 

2. Add the puréed tomatoes and crushed chilli flakes to the onion in the pan and season lightly with salt and plenty of pepper (the olives will add more salt to the dish). Bring it to boil, and then stir occasionally over medium heat. Let the sauce boil for 20 minutes.

 

3. Cook the spaghetti in a pan of salted boiling water for 10 minutes, or according to the pack instructions.

 

4. Drain the pasta and add the sauce, peppers and olives. Toss gently to mix it and serve immediately.
