This creamy Pumpkin Gnocchi Casserole, a culinary delight created from scratch due to a deep love for food, will make you adore pumpkins. This vegetable isn’t known to be very versatile or popular but that will soon change. Here’s the recipe of Pumpkin Gnocchi Casserole that you will relish.

Ingredients:

For gnocchi:

6-7 baked potatoes
1 cup refined flour
Salt to taste
2 tbsp chopped parsley

For pumpkin:

2 tbsp diced pumpkin
Salt to taste
2 tbsp butter

For pumpkin puree:

2 ½ cup pumpkin (skin on)
2 sprigs thyme
Salt to taste

For the bechamel sauce:

1 ½ tbsp butter
1 ½ tbsp flour
1 ½ cup milk
A pinch of nutmeg
Salt to taste

Method:

  1. Peel the baked potatoes and grate them. Mix it with the flour, salt and parsley.
  2. Knead gently to make dough. Roll out small-size balls of the same.
  3. Use a fork to give them marks.
  4. Drop these into boiling water and let them cook till they float in the water.
  5. Remove and chill in ice water.
  6. Take off once cooled and keep on a  plate.
  7. Cut the pumpkin in small dices and toss them in brown butter. Cook till golden brown.
  8. For the puree, roast the whole pumpkin in the oven for about 15 minutes. Once cooled, puree it.
  9. For the bechamel sauce: In a pan, melt some butter and add flour without letting it color. Gradually add in the milk. Let it thicken and add the seasoning and nutmeg.

To assemble the dish:

  1. In a pan, add a little olive oil and toss some finely-chopped onion and garlic.
  2. Add the pumpkin puree to this.
  3. Add about two tbsp of bechamel to the puree.
  4. Plate the puree in a casserole.
  5. Toss the gnocchi in butter and place over the puree.
  6. Grate some cheese and bake in the oven for about five minutes. Top it with pumpkin dices and serve with some garlic bread.
