Recipe: Opera Pistachio Cake for Diwali Decadence

Sweet and fancy somethings will just add to the festivities. We turned to baking a rather rich cake with layers of flavours and textures. It’s a pistachio cake, layered with fresh strawberry jam, lemon butter cream and some love. Yes, a sure shot way to win their hearts this Diwali!

Ingredients:

 

For pistachio cake
125 gms marzipan
15 gms sugar
30 gms minced unsalted pistachio paste
3 eggs
45 gms flour
30 gms butter
1 gm green food butter

For strawberry jam
200 gms fresh strawberry
50 gms castor sugar
5 gms lemon juice

For lemon butter cream
100 gms Philadelphia cream cheese
50 gms butter
50 gms icing sugar
3 lemons, juiced

Method:

 

Bake

1. Cream sugar, pistachio paste and marzipan together.

2. Add eggs one by one and whisk the batter.

3. Fold in flour with melted lukewarm butter and green colour.

4. Spread batter in a square cake pan 2 cm thick and bake at 180 degree celcius until cooked.

Prep

1. In a saucepan, boil strawberries, sugar and lemon juice, allow the mixture to simmer, stirring frequently, until the sugar is fully dissolved, and the mixture thickens in consistency.

2. Cover and keep in the refrigerator.

Whip

1. Cream butter and sugar and lemon zest and beat in the Philadelphia cream cheese until smooth and stiff.

Plate

1. Slice the pistachio cake loaf into half and spread strawberry jam in the middle.

2. Cut the cake into equal rectangular pieces. Pipe dollops of lemon butter cream on top.

3. Place green coloured chocolate strips and decorate with some fresh strawberry jam.
