Kesari Mishri Mawa brings out the authentic flavours of Rajasthan

 

A concoction of pure ingredients like milk and kesar when stirred together make a delicious dessert that’s totally irresistible. By looking at it you might think of how much pain and effort went into its preparation. But today, we are giving out a secret. This exquisite Rajasthani delicacy is not as difficult to make as it looks. Here’s a simple recipe of the popular Rajasthani dessert, kesaria mishri mawa to bring a toothsome end to your dinner party. 

 

Ingredients:

2 litres milk
15 gm crystal sugar
3.5 gm chopped nuts to decorate (pista, almonds)
4.10 ml citric acid dissolved in 100 ml water
5.5 gm kesar

 

Method:

1. Boil half the milk. Add the citric solution as it comes to boil. 

2. Switch off the gas once the chenna (fresh, unripened curd cheese) settles down. Sieve through muslin cloth, press out excess water, take in a plate and press down. Put the remaining milk in a heavy pan and boil to half 

2. Add the chenna and boil till the mixture thickens. Stir continuously all the while till it softly thickens. Continue to cook, stirring into a lump. 

3. Add the crystal sugar and kesar.

4. Sprinkle chopped almonds and pistachios and serve.
