Recipe: Healthy Chicken Soup for Every Soul

A healthy protein-rich bowl of soup

 

Since the time I was blessed with a baby girl, I have had this challenge as a chef to serve her a nutritious and healthy meal. But to be able to prepare an enriching meal and get pass her tantrums with regard to food, is a major hurdle (that my wife manages to surpass easily. Thank god!)

 

However, being in the hospitality industry I have had prior experiences in winning over the most difficult guests (read – Obnoxious). So, why not my own one-year-old girl?

 

That’s when I tried to make this protein-rich, easy-to-digest, good old chicken soup. But this recipe has the twist of taste that was acceptable by my tantrum-throwing-kid’s palate. After several mopping-soup-off-the-floor sessions, smiles and happy cries, I finally found the perfect recipe to make her happy.

 

Here’s sharing with you all my own variation of the chicken soup that can be actually relished by all.

 
 
Ingredients:
 
200 gms boneless chicken breasts
60 gms onions
5 gms garlic                          
2 gms ginger                         
1 gm black pepper corn (Optional)
3 gms cooking salt                             
20 ml cooking oil                              

 
Method:

1. Clean and cut chicken into small pieces.

2. Peel and dice the onions.  Wash with water and drain; keep on the kitchen towel to absorb excess moisture.

3. Peel and cut garlic into small pea-sized dices (this allows only limited flavor into food, but great if your kid is little big, they can eat this as corn-look-like-pieces)

4. Wash, peel and dice ginger into pea-sized shape.

5. Heat oil in a soup pan and add black pepper, garlic and onion. Sauté till onion turns translucent, add ginger and stir for a while.

6. Add chicken pieces and continue cooking till chicken turns white from outside, but remains un-cooked.

7. Add 1 litre water and bring to boil, simmer for 25-30 minutes.

8. Strain and discard all solids, chicken pieces could be retained for curry making or given to elders with soup as garnish.  Add and adjust seasoning.

 

This soup should be transparent (consommé like consistency), very thin and with a little shine on top.
