Recipe: Grilled Chicken with Green Beans and Tomatoes

We tried to cook up a bunch of elaborate recipes to please our guests all of last week but now we need something that will satiate our foodie souls. And since we’re always pressed for time, a simple recipe with our favourite ingredient is the best! So, here’s a unique recipes of grilled chicken served with green beans and tomatoes for your meal to be healthy, flavourful and no less festive. After all, we believe in celebrating every day with equal fervour!

Ingredients:

½ cup fresh cilantro
1 clove garlic, finely chopped
2 tablespoons fresh lime juice
½ tsp sugar
4 tbsp olive oil
120 gms boneless, skinless chicken breasts
kosher salt and black pepper
1 pound green beans
4 plum tomatoes, halved lengthwise

Method:

1. Heat grill to medium-high. In a small bowl, combine the cilantro, garlic, lime juice, sugar, and 1 tbsp oil to make a vinaigrette and set aside.

 

2. Rub the chicken with one teaspoon oil and season with ½ teaspoon salt and ¼ teaspoon pepper. Grill until cooked through, 5 to 6 minutes per side.

 

3. Meanwhile, in a large bowl, toss the green beans and tomatoes with the remaining 2 teaspoons oil and ¼ teaspoon each salt and pepper.

 

4. Grill the beans and tomatoes, turning the beans often and the tomatoes once, until tender and charred, 3 to 5 minutes.

 

5. Serve the chicken and vegetables with the vinaigrette.
