Every time I make a chicken appetiser, it becomes too dry by the time dinner is served and then I’ve got to reuse the chicken the next day and turn it into gravy. But this time I tried to make this chicken appetiser with some gravy so that it doesn’t dry up and it turned out pretty well. The succulent chicken is marinated in soya and schezwan sauce to give it that luscious flavour your guests will savour.

Try it out for an effortless appetiser that’ll be ready in a jiffy.

Ingredients:

6 chicken legs / drumsticks
Salt, as per taste
½ tsp pepper (Use more for taste)
4 to 5 garlic pods, minced
2 tsp schezwan sauce
1 tbsp butter
Oil
½ capsicum, thinly sliced
½ carrot, thinly sliced
1 pod of spring onion whites, thinly sliced
1 tsp soya sauce
Spring onion greens, chopped for garnish
Shredded cheese for garnish

Method:

1. Wash and clean the chicken legs well.

2. In a bowl add salt, pepper and the minced garlic.

3. Add 1 tsp schezwan sauce and 1 tbsp butter and marinate the chicken legs. Leave it aside for 15 minutes.

4. In another pan add the thinly sliced capsicum, carrots and spring onion whites and sauté.

5. Add another tbsp of schezwan sauce along with soya and the marinated chicken and sauté all together, properly. Cover the pan and cook till the chicken is done. This should take around 15 to 20 minutes.

6. You can make it spicier if you like by increasing the amount of schezwan sauce.

7. When done, remove in a plate and garnish with spring onion greens and some shredded cheese to enhance the taste.
