How to Make Wholewheat Zucchini Seed Muffins

Post Diwali feasts and sweets, if you are still craving sugar, we won’t blame you. To soothe such a hangover we have an healthy alternative that is sure to fix your saccharine cravings. Wholewheat and zucchini is the treat that will make life sweeter and healthier.

Ingredients:

 

225 grams whole wheat flour
175 mm milk
4 tbsp honey
1 and 1/2 tbsp baking powder
4 tbsp oil
few pumpkin seeds
1 tsp cinnamon powder
Few oats for topping
175g zucchini
1/2 tsp salt
2 eggs

Method:

 

  1. Sift all the dry ingredients in a bowl – flour, cinnamon powder, baking powder and salt.
  2. Whisk it so that all the ingredients get mixed.
  3. In a separate bowl, mix all the wet ingredients together.
  4. Add 2 eggs and beat them.
  5. Add milk, oil, honey and zucchini. Mix thoroughly.
  6. Add the dry ingredients to the wet ingredients.
  7. Mix well until all the flour get mixed with the wet ingredients.
  8. Put the batter in the muffin papers.
  9. Top with oats and pumpkin seeds.
  10. Bake the muffins in a pre-heated oven at 180 degrees for 20-25 minutes.
  11. Cool for 10 minutes and muffins are ready to serve.
