Post Diwali feasts and sweets, if you are still craving sugar, we won’t blame you. To soothe such a hangover we have an healthy alternative that is sure to fix your saccharine cravings. Wholewheat and zucchini is the treat that will make life sweeter and healthier.
Ingredients:
225 grams whole wheat flour
175 mm milk
4 tbsp honey
1 and 1/2 tbsp baking powder
4 tbsp oil
few pumpkin seeds
1 tsp cinnamon powder
Few oats for topping
175g zucchini
1/2 tsp salt
2 eggs
Method:
- Sift all the dry ingredients in a bowl – flour, cinnamon powder, baking powder and salt.
- Whisk it so that all the ingredients get mixed.
- In a separate bowl, mix all the wet ingredients together.
- Add 2 eggs and beat them.
- Add milk, oil, honey and zucchini. Mix thoroughly.
- Add the dry ingredients to the wet ingredients.
- Mix well until all the flour get mixed with the wet ingredients.
- Put the batter in the muffin papers.
- Top with oats and pumpkin seeds.
- Bake the muffins in a pre-heated oven at 180 degrees for 20-25 minutes.
- Cool for 10 minutes and muffins are ready to serve.
