How to Make Tomato Garlic Chutney [Video]

An easy recipe for tomato garlic chutney

What is the one thing that’s common between sandwiches, rotis and pakoras? Besides sharing your kitchen space, pakoras need chutney that doubles up as a spread for sandwiches and rotis. Tomato garlic chutney is known for its remarkable versatility, not to mention the irresistible chatpata taste. Tarla Dalal entices us to OD on this goodness with a recipe.

Ingredients:

1 cup finely chopped tomatoes
1 tbsp finely chopped garlic
1 tsp oil
1/4 cup finely chopped spring onions whites
2 whole dry kashmiri red chillies, soaked and finely chopped
salt to taste
1 tbsp tomato ketchup
1 tbsp finely chopped spring onion greens
1 tbsp finely chopped coriander

Method:

 

1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
2. Add the garlic, mix well and sauté on a medium flame for a few seconds.
3. Add the kashmiri red chillies, tomatoes and a little water and cook on a high flame for 10 to 15 minutes, while stirring occasionally.
4. Add the salt, tomato ketchup, mix well and sauté on a medium flame for 1 to 2 minutes.
5. Remove from the flame and allow it to cool completely.
6. Add the spring onion greens and coriander, mix well and serve immediately.
