South Indian delicacy potato kara kari

A Tamil delicacy, potato kara kari is a must-have during a Tam Brahm wedding. A spicy potato dish, its crunchy texture is offered by a unique masala mix. You won’t even have to fry it to get the amazing crunch. Here’s the step-by-step recipe to make this yummy dish.

Ingredients:
2 tbsp Oil
3 potatoes, medium-sized, boiled and peeled
5-6 dried red chillies
1 tsp coriander seeds
1 tsp urad dal(black split gram)
1 tsp chana dal (split Bengal gram)
Asafetida dissolved in water
2-3 tamarind
A pinch turmeric
Salt to taste
Raw rice
Coconut chunks
Curry leaves
1 tsp mustard seeds

Method:
1. Heat a pan and add ½ tsp of oil.
2. Once the oil is heated, add 1 tsp urad daal, 1 tsp channa daal. Stir the mix and you will notice that it starts to brown quickly.
3. Now, add 1 tsp of coriander seeds and stir for around 30 seconds.
4. Add five to six dried red chilies. Sauté till you get a very nice aroma of the dhania.
5. Add some rice to the mixture and sauté.
6. Now, add the coconut chunk and sauté.
7. Add a dash of salt, whole tamarind and sauté for a few seconds
8. Take it off the flame and allow it to cool till room temperature.
9. Grind the masala mix into a coarse powder.
10. Heat 1 tablespoon oil in a pan.
11. When the oil is hot, add mustard seeds.
12. Once the mustard seeds crackle, toss in curry leaves, turmeric, 2 tsp hing water and potatoes.
13. When the potatoes are well mixed with the turmeric, add two to three tsps of the masala mix and pinch of salt.
14. Once the potatoes are well coated, your dish is ready to serve.
