Try this gooey mississipi mud pie
With Chocolate day celebrations continuing till Valentine’s Day, there is little else we can think of other than a delish chocolate dessert that can turn the tables on a dull evening. Literally! So spread some chocolate love and bring out the hidden baker in you by treating your partner to this sinful indulgence. Here’s a super chocolaty recipe of Mississippi mud pie to celebrate your day of love.
Ingredients:
For the crust and filling:
300 gms Bourbon biscuits, crushed
2 eggs
100 gms fresh cream
100 gms butter
100 gms dark cooking chocolate
100 gms brown sugar
Ingredients for the sauce:
175 gms icing sugar
150 gms dark chocolate
150 gms fresh cream
2 tbspns honey
Method:
1. Ingredients are divided into two parts. The crust and the filling and the sauce that goes on top.
2. For the crust, add butter to the crushed bourbon biscuits and mix it with your hands.
4. Now, cover the base and sides of your bowl with the crust. Refrigerate for 10 minutes.
5. Now for the filling, crack two eggs in a bowl and add the sugar. Whisk them together till you get a stiff mixture.
6. The next step is to create a double bowler to melt the chocolate. In a pan of boiling water, keep a glass bowl with chocolate and let it heat. You can also add butter and let it melt. Keep stirring to prevent it from burning.
7. Let it cool at room temperature and then add the egg mixture and fresh cream to it, slowly. Incorporate well.
8. Add this mixture to the bowls with the crust (prepared earlier).
9. Preheat the oven at 180 degree celius and put the mud pies in for 45 minutes.
10. Now for the fudge sauce, add the chocolate, icing sugar, honey and cream together and heat.
11. Let it all melt into a gooey fudge sauce. Let it cool.
12. Now add the sauce to the bowls and serve this gooey Mississippi mud pie to your loved ones.
Tips:
1. If you do not have the bourbon cookies you can use the regular chocolate chip cookies/chocolate flavoured cookies and add three tbsp of cocoa.
2. Once the mud pie and fudge sauce have come to room temperature, pour the fudge sauce over the mud pie and let it chill in the fridge for two hours before serving.
