Mumbai’s quintessential snack, pav bhaji, gets a healthy makeover with sprouts and low-cal butter. If you have been grudgingly avoiding this delish dish due to calorie concerns, lay them to rest. This recipe from Tarla Dalal’s kitchen will tell you to make it in a way that’ll take your taste buds and waistline to a happy place.
Ingredients:
2 cups boiled sprouted moong (whole green gram)
1 tsp low-fat butter
1 tsp oil
3/4 cup finely chopped onions
1 1/4 cups finely chopped tomatoes
1/2 tsp chilli powder
1 1/2 tsp finely chopped green chillies
1 tbsp pav bhaji masala
Salt to taste
1 cup boiled , peeled and mashed potatoes
3/4 cup finely chopped and boiled mixed vegetables (french beans , carrots and green peas)
2 tbsp finely chopped coriander (dhania)
1 tbsp lemon juice
For serving
8 whole wheat pav or buns
Method:
- Heat the oil and butter in a deep non-stick pan, add the onions and sauté on a medium flame for one to two minutes.
- Add the tomatoes, chilli powder, green chillies, pav bhaji masala, salt and ¼ cup of water, mix well and cook on a medium flame for three to four minutes, while stirring occasionally.
- Add the potatoes and mixed vegetables, mix well and cook on a medium flame for one minute, while mashing using a masher.
- Add the sprouted moong, ½ cup of water, coriander, lemon juice and salt, mix well and cook on a medium flame for one to two minutes, while stirring occasionally.
- Serve hot with whole wheat laddi pav or whole wheat bread.
