How to Make Low-Cal Corn and Pesto Mini Pizza

Low-cal corn and pesto mini pizzaa

We believe that counting calories totally ruins the party mood. Since December is the month to celebrate all things nice, we decided to take that chip off your shoulder by scouting for healthy party yummies.  These bite-sized mini pizzas have whole wheat bread as the base with a nutritious corn pesto topping. Ingredients:

24 mini whole-wheat pizza base
Butter or oil for greasing
Dry red chilli flakes (for the garnish)

Topping:
1/2 cup cream style corn (canned)
Pesto sauce, recipe below
Salt to taste
1/2 cup grated cooking cheese or grated mozzrella cheese

To be ground into pesto sauce:
2 tbsp basil leaves , chopped
4 walnut halves
1 large garlic clove , chopped
2 tsp olive oil or oil
Salt to taste

Method:

1. Place the mini pizza bases on a greased baking tray.
2. Add the corn to the pesto sauce. Spread a teaspoon of the sauce on each pizza base.
3. Sprinkle cheese on top of each pizza.
4. Bake in a pre-heated oven at 200°c (400°f) for 4 to 5 minutes or till the cheese has melted.
5. Serve hot garnished with red chilli flakes.
