So if you’re looking to have a delicious Diwali too you might want to make note of this mouth-watering recipe.
Makes 24 laddoos
Ingredients
2 1/2 cups besan
1 1/3 cup sugar
1/4 cup milk
1 tbsp green cardamom seeds
Orange food colour
Ghee to deep fry
10 almonds, blanched and slivered
10 pistachios, blanched and slivered
Method
1) Cook sugar with three cups of water to make syrup of one thread consistency. Add milk and when the scum rises to the top, remove it. Add colour as desired and keep the syrup aside.
2) Make a thin batter of pouring consistency with the besan and three cups of water. Add food colour as required.
3) Heat ghee in a kadai. Hold a perforated spoon over the hot ghee, pour a little batter over it and let it pass through fast into the kadai to make boondis. Fry for about two to three minutes.
4) Remove the boondis, drain thoroughly and put into the syrup. When the boondis have absorbed all the syrup, add cardamom seeds and mix gently.
5) Shape into laddoos.
6) Garnish with slivers of pistachios or almonds. Cool and store.
