How to Make Herbed Cottage Cheese Wrap [Video]

For the days when you are in not in the mood for the regular dal and rice meal, whip up an easy dish like this cottage cheese wrap. Cottage cheese or paneer spiced with herbs and green mayo enhances the flavour. Add some lettuce, carrots and sprouts and you’ve made a wholesome meal. Try it out.

Ingredients:

For the roti base:

1 cup whole wheat flour
1 tbsp oil
a pinch of salt
Loose whole wheat flour for rolling

 

For the green mayonnaise:

½ cup coriander, finely chopped
¼ cup parsley, finely chopped
1 tbsp green chillies, finely chopped
A pinch of sugar
salt to taste
1 tsp lemon juice
½ cup mayonnaise

 

To be mixed into a herbed paneer filling:

1 cup paneer, cut into cut into cubes
salt to taste
1 tsp dried oregano
1 tsp dry red chilli flakes (paprika)

 

Other Ingredients:

2 cups roughly torn lettuce
1 cup bean sprouts
8 tbsp grated carrot

Method:

For the roti

1. Combine all the ingredients in a bowl and knead into a soft dough using enough water. Keep aside.

 

2. Divide the dough into 4 equal portions and roll out each portion into 200 mm. (8″) diameter circle using a little flour.

 

3. Heat a non-stick tava (griddle) and lightly cook the rotis on both the sides. Keep aside.

 

For the green mayonnaise

 

1. Combine the coriander, parsley, green chillies, sugar, salt and lemon juice, and blend in a mixer to a smooth paste using a little water.

2. Transfer it to a bowl, add the mayonnaise, mix well and refrigerate for an hour.

 

To make the wrap:

1. Just before serving, warm the roti on a non-stick tava.

2. Place the roti on a clean dry surface and arrange ½ cup of lettuce in the centre in a single row of the roti.

3. Arrange 1/4th of the herb paneer filling and 1/4 cup of bean sprouts and 2 tbsp carrots over it.

4. Spread 1/4th of the green mayonnaise over it and roll up the roti tightly.

5. Repeat with the remaining ingredients to make 3 more wraps.

6. Serve immediately.
