How to Make Healthy Rava Pancakes [Video]

Healthy semolina pancakes

 

 

Easy breakfast recipes that are also healthy start the day on a good note. It has to be something light yet gives you loads of energy to go through the day with ease. We got lucky and stumbled upon this healthy rava pancake recipe that is quick, easy and colourful. Serve with chutney of your choice and you are good to go.

Ingredients:

1 ½ cups semolina (rava)
¾ cup fresh curd
½ cup finely chopped cabbage
½ cup grated carrot
¼ cup finely chopped coriander
1 tbsp finely chopped green chillies
Salt to taste
2 tsp fruit salt
4 tsp oil

For serving: Coconut chutney

 

Method:

 

1. Combine the semolina, curd and one cup of water in a bowl, mix well and allow it to soak for 30 minutes.

2. Add the cabbage, carrot, coriander, green chilies and salt and mix well.

3. Just before making the pancakes, add the fruit salt and two tbsp of water to the batter.

4. When the bubbles form, mix gently.

5. Add two tsp of oil and mix gently.

6. Grease a non-stick mini uttappa pan using a little oil.

7. Pour approximately one and a half tbsp of batter in each uttappa mould and spread it lightly.

8. Cook using a little oil, till they turn crisp and golden brown from both the sides.

9. Repeat steps seven and eight to make one more batch of mini pancakes.

10.Serve immediately with coconut chutney.
