Perfect puris

 

 

Are you struggling to make those fluffy puris that your mom brings out with great ease? One of the most versatile Indian foods, puris are served with varying accompaniments and are also relished with curd or achaar. Steaming hot puris when served with aloo bhaji or a masaledaar sabzi makes for a wonderful meal. But, if not made right they entirely lose the aesthetic component and taste factor. Here’s a foolproof recipe that will help you make the perfect puris.

 

Ingredients:

 

1 cup whole wheat flour (gehun ka atta)
2 ½ tbsp oil
a pinch of salt
oil for deep-frying

 

Method:

 

1. Combine the whole wheat flour, two tbsp of oil and salt and knead into stiff dough using enough water.

2. Knead again with the remaining ½ tbsp of oil and cover and keep aside for 10 to 15 minutes.

3. Divide the dough into 12 equal portions and roll out each portion into a 75 mm. (3″) diameter round.

4. Heat the oil in a deep kadhai and deep-fry the puris a few at a time till they turn golden brown in colour from both the sides.

5. Drain on absorbent paper and serve hot.
