Ladies and gentlemen, today is Pancake Day! It means that calories and sugar are in order. But, since we refuse to resort to unhealthy tidbits, we trolled for a healthy version of pancake recipe. Presenting, whole wheat banana pancake with chocolate chips to celebrate the day with yummy-ness. Even vegetarians can enjoy this pancake because it is eggless. Yes, no one should feel left out!
Ingredients:
½ cup whole wheat flour
2 small overripe bananas
Milk as required
¼ cup bitter sweet choco chips
2tbsp butter
A pinch of salt
A pinch of cinnamon powder
1 tsp vanilla extract
1 tsp baking powder
Method:
- Start by mashing the bananas in a bowl. Make sure there are no lumps and mash it till it forms a smooth paste-like consistency.
- Mix the dry ingredients first – whole wheat flour, pinch of salt, pinch of cinnamon powder and baking powder. Lightly mix them.
- Add mashed bananas and vanilla extract to the dry ingredients and mix them.
- Now add the milk and whisk it. You need to keep adding milk and whisking, till you get a batter with a pouring consistency.
- After all the milk is incorporated, add a part of the choco chips and save some for garnishing .
- Heat a pan and melt some butter.
- Take a ladle full of batter and cook the pancakes.
- Once they are ready, you can enjoy them with maple syrup or honey or just enjoy them as they are.
Tip: Riper and softer bananas work better. You can also add oats and chopped fruits instead of the choco chips.
