Doodh pak is a traditional Gujarati dessert that is savored with warm puris during Navratri. It is deliciously flavoured with pistas, almonds, nutmeg and cardamom. This heartwarming dish must be relished with friends and family on a happy festive day.
Ingredients:
½ a liter of full fat milk
125g rock sugar
1 tbsp long grain rice, washed and rinsed
1 tbsp clarified butter
¼ tsp nutmeg powder
¼ tsp cardamom powder
Saffron for added colours
1 tbsp pistachio
1 tbsp almond, slivered
Method:
1. Boil the milk in a thick bottomed sauce pan. Stir the milk from time to time and make sure that it doesn’t stick to the bottom of the pan.
2. Coat the rice with ghee in a bowl.
3. Add this to the boiling milk.
4. Boil the mix for 5-7 minutes.
5. Add the rock sugar.
6. When the milk is getting thicker, add powdered cardamom and nutmeg.
7. Sprinkle some saffron powder.
8. Stir well and allow the flavours to infuse.
9. Add the almonds and pistas. Stir well.
10. Boil for two-three minutes.
11. Serve hot or at room temperature or cold.
