Desi-style banana cake topped with ghee
Who says you need an oven in the Indian kitchen when you have the steamer? Desi-style steamed cakes are devoid of butter, flour, refined sugar and fat-laden ingredients. All you need are rice flour, grated coconut, jaggery and banana. Relish it as a dessert, serve it with tea or pack a few for your friends. These cakes are nothing short of irresistible.
Ingredients:
150 gms of rice paste soaked overnight with water
2 tbsp of liquid jaggery
50 gms of grated coconut
½ tsp of cardamom powder
5 bananas mashed
5-6 banana leaves
Method:
- Transfer the mashed bananas into a mixing bowl. Add the rice paste and liquid jiggery. Mix well.
- Now, mix the grated coconut and cardamom to the rice-banana batter.
- Take a banana leaf. TIP: Slightly roast the leaf in an oven or on fire. Add 2 tbsp of the mixture on to the banana leaf. Roll the leaf and close from all sides. Place the rolled leaf into the steamer
- And repeat the process with the remaining. Steam the banana cakes for 15- 20 mins
- Top it up with ghee/ butter
