How to Make Chana Spinach Rice for Your Kid’s Tiffin

We have a healthy and tasty recipe for fussy eaters. With spinach powering your child’s iron intake and protein-rich channa, you will happy that there’s something healthy in your kiddo’s lunch box. It pairs well with raita or some chutney. Make some extra for your lunchbox too!

Ingredients:

1 cup kala chana (brown chick peas), soaked and boiled
1/2 cup spinach, shredded
2 1/2 cups long grained rice, cooked
2 tsp oil
1/2 cup onions, thinly sliced
1 tsp ginger-garlic paste
1/2 cup capsicum, finely chopped
1/2 cup tomatoes, finely chopped
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander-cumin seeds powder
Salt to taste

Method

 

  1. Heat oil in a broad non-stick pan, add onions and sauté on a medium flame for one to two minutes or till they turn light brown in colour.
  2. Add ginger-garlic paste and sauté on a medium flame for a few seconds.
  3. Add capsicum and tomatoes and sauté on a medium flame for one to two minutes.
  4. Add spinach, turmeric powder, chilli powder, coriander-cumin seeds powder and two tbsp water, mix well and cook on a medium flame for one to two minutes.
  5. Add kala chana and salt and mix well.
  6. Add rice, mix well and cook on a medium flame for 1 to 2 minutes.
  7. Serve hot.
