Have a good morning with Besan Omelet for breakfast

Debunk the fact that one can make omelets with just eggs. This one goes out to vegetarians who are craving to try something new for breakfast. A besan omelet that comes with a Sindhi twist is just what you need for a yummy start to your mornings. You can also relish it as an evening snack. Serve it with some mint chutney or ketchup. 

Ingredients

 5 heaped tbsp besan (gram flour)
 Oil to fry
 1 small onion, finely chopped
 Coriander leaves, finely chopped
 1-2 green chillis, finely chopped
 1 inch ginger, finely chopped
 Salt to taste
 1/2 tsp red chilli powder
 Water for batter

Method

1.    Add chopped onions, coriander, chillies, red chilli powder, salt and ginger to the besan.
2.    Make the batter by adding water. Ensure that there are no lumps. It should be free flowing and that’s the consistency we require.
3.    Put a little bit of cooking oil in a non stick pan. Now add a spoonful of batter and spread it out evenly like a pan cake.
4.    Allow it to cook and spread a little bit of oil on the omelet. This prevents it from sticking to the pan when you flip it. Make sure that both sides are cooked.
5.    Now, put a little bit if oil on the sides of the omelet to allow it to fry so that it becomes crisp and golden brown.
6.    Once both the sides are done, your omelet is ready to be served.
