Mouth-watering fettucini with spinach in paneer sauce
What’s for dinner tonight? A pasta preparation of fettuccine with a healthy dose of spinach, coated with creamy paneer sauce and topped with cheese for the perfect finish. This Italian dish pairs best with freshly toasted garlic bread for a wholesome meal. Here’s a simple and quick recipe of Fettucini with spinach in paneer sauce, making it your best bet for an impromptu party or get together.
Ingredients:
1 ½ cups cooked fettuccine
¾ cup blanched and chopped spinach
1 tbsp oil
¼ cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chilies
salt and black peppercorns (kalimirch) powder to taste
¼ cup milk
5 tbsp grated processed cheese
To Be Blended Into A Smooth Paneer Sauce
1 cup grated fresh paneer (cottage cheese)
1 cup milk
salt to taste
½ tsp nutmeg (jaiphal) powder
For The Garnish
½ tsp dry red chili flakes (paprika)
Method:
1. Heat the oil in a broad non-stick pan, add the onions, garlic and green chilies and sauté on a medium flame for 1 minute.
2. Add the spinach and salt and cook on a medium flame for 30 seconds, while stirring occasionally.
3. Add the fettuccine, paneer sauce and pepper, mix lightly and cook on a medium flame for 2 to 3 minutes, while tossing occasionally.
4. Add the milk and 2 tbsp of cheese and mix well.
5. Transfer the mixture into a baking dish, sprinkle the remaining 3 tbsp of the grated cheese evenly over it.
6. Microwave on high for 4 to 5 minutes or bake in a pre-heated oven 180°c (360°f) for 15 minutes.
7. Serve hot garnished with chili flakes.
