There is only one kind of food that can be had anytime of the day, any which way – either breakfast, lunch, mid-morning or evening snack or a meal during dinner time. From boiled eggs to egg stir-fries and rolls, there is an egg dish for everyone. But there’s a general misconception that eggs are mostly used in continental cooking and the only Indian egg dishes most people can think about is egg curry and masala omlette. However, that isn’t the case. In fact there are so many varieties, with such difference in flavour and texture that you should taste at least some of them once in your life. Check out this short list of desi egg dishes we’ve put together for you.

1. Egg Bajji with Chutney
In this dish, the egg is dipped in chutney first before batter-frying it. It makes for a lovely afternoon snack with chai.

2. Egg Pepper Tawa Fry
This dish works really well as a side to any rice dish. Just try it with some simple dal khichdi. It’s spicy and the addition of rice flour to the marinade gives it a crispy edge.

3. Kodi Guddu Gasagasala Kura
Made in typical Andhra style, this dish is basically fried eggs mixed with rich poppy seed paste. It’s impossible not to like this dish with layered flavours and textures like the sweet-subtle taste of poppy seeds, hot spices and crunchy eggs.

5. Appam and Egg stew
This is the egg version of the famous Kerala staple – appam and stew. Hard boiled eggs gently simmered in a coconut-milk flavoured gravy with the scent of fried onions, curry leaves and coriander – this stew is as flavourful as it is mild.

6. Egg Kothu Paratha
This dish is a personal favourite. Basically it is eggs scrambled with parathas and a whole heap of south Indian masalas thrown in. But the best part about this dish is its texture – soft scrambled eggs mixed with spicy onions and little bits of fried and flaky malabar parathas. It’s just yum!

7. Anda Papdi Chaat
Whoever heard of an eggy version of the local papdi chaat? But it exists. Essentially you susbstitute mashed potato with mashed eggs and mayo. More indulgent than the veg ones, I must say. Just try this out.

8. Nargisi Kofta
This is more or less the desi version of scotch eggs; boiled eggs coated with mutton kheema and fried until slightly crisp. The egg is then halved longitudinally and dropped into a gravy.
