For all the Sindhis who can’t survive without their rich and flavourful food, Seyal Chapati is a beloved traditional dish. Made originally to finish off all the leftover chapatis from last night’s dinner, it’s become such a favourite that more often than not you’ll have women preparing more chapatis only to be able to make some fresh Seyal (also known as sail) in the morning. This easy recipe will make a delicious and filling early morning treat for your loved ones. Try it out.
Ingredients:
4 chapatis (preferably left over from the previous night)
2 tsp garlic, chopped
1 tsp ginger, chopped
2 onions, chopped
2 tomatoes, chopped
2 green chillies, chopped
1 tbsp butter
2 tbsp fenugreek leaves, crushed
½ tsp turmeric powder
½ tsp coriander powder
¼ tsp garam masala
¼ tsp red chilli powder
salt to taste
½ cups water
2 tbsp oil
Method:
1. Tear the chapatis into several tiny pieces.
2. In a pan add some oil and sauté the chopped ginger and garlic together till the mixture turns pinkish.
3. Sauté the chopped onions till they achieve the same light pink colour.
4. Add the chopped tomatoes and green chillies and cook the amalgam for one to two minutes.
5. Add all the spices, salt, red chilli powder, garam masala, coriander powder, turmeric and crushed fenugreek leaves and mix well.
6. Add the little pieces of chapatis and mix well.
7. Add a cup of water and cook for a minute.
8. When this dries up add a tablespoon of butter mix well and switch the gas off.
9. Garnish with coriander leaves and butter. Serve with curd.
