When you want to add a fun twist to your lunch box, turn to fusilli. With fresh veggies and some paneer, this will be a delicious and nourishing meal. Besides, it’s perfect for time-crunched mornings and fussy kids. Make this a part of your lunch box menu to veer away from boring recipes.
Ingredients:
2 cups fusilli, cooked
1 tbsp butter
1 tbsp olive oil
1 tsp green chillies, finely chopped
3/4 cup paneer, cubed
Salt to taste
1 tsp dried oregano
1/4 cup fresh parsley, finely chopped
1/2 cup fresh basil leaves, finely chopped
1/2 cup milk
1/4 cup fresh cream
1/2 tsp black pepper, freshly ground
For the garnish:
2 tbsp processed cheese
1 tbsp fresh parsley, finely chopped
1/4 tsp dry red chilli flakes
Method:
- Heat the butter and olive oil in a non-stick pan, add the green chillies, mix well and sauté on a medium flame for 30 seconds.
- Add the paneer and a little salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the oregano, parsley, basil, milk and cream, mix well and cook on a medium flame for 1 minute, while stirring continuously.
- Add the fusilli and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously.
- Serve hot garnished with cheese, parsley and chilli flakes.
