Recipe: Mango Mascarpone Rasmalai

Rasmalai, aamras and mascarpone cheese combine to create this pièce de résistance for Diwali. To get the dessert together won’t take more than 15 minutes. You need to freeze it and dig into it like a delish icecream. If you have some leftover rasmalai, this is the kind of art that you can create.

Ingredients

300 gm rasmalai
300 gm mascarpone
270 gm white chocolate
100 ml aamras
125 gms cream
Pinch of cardamom powder
Chocolate and fresh fruits for garnish

Method:

1. Melt the chocolate and keep it warm.

2. In a mixing bowl, cream the cheese. Add in the cream, aamras, cardamom powder and the hot chocolate.

3. Pour the mixture into moulds layered with the rasmalai.

4. Freeze the pastry and demould. Garnish with chocolate and fresh fruits.
