Diwali is here and you cannot resist gorging on those lip-smacking goodies! We know you slogged for hours in the gym for that perfect figure to flaunt this festive season, but you can try going easy with these diet recipes. Surely a hit we must say!
Diet Karanji
Ingredients
1 cup wheat flour
3 tbsp ghee
1 pinch salt
1/2 l oil (for frying)
1 cup grated coconut
3 ¼ cups honey
1½ cup milk
Few almonds
Few raisins
1/2 tsp cardamom powder
1 tbsp poppy seeds
Method
1) In a mixing bowl combine the flour, ghee and some salt. Rub in well. Gradually add water and knead to form firm dough. Cover with wet cloth and set aside.
2) For the stuffing, cook the coconut (use fresh or dried), honey, milk, chopped almonds and raisins, cardamom powder, and poppy seeds(optional) till the milk evaporates.
3) Divide the dough into 20 to 25 sections, roll them out into flat round pancakes. Place a spoon of stuffing at the centre and fold the pancake in half. Use a cutter to create the fluted crescent border and cut off excess dough. You can seal the edges by applying a little milk and pressing down hard.
4) After all the karanjis are stuffed, fry them in very hot oil for 2 to 3 minutes or till golden brown. Remove onto paper towels and allow to cool.
Bhajanichi Chakli
Ingredients
2 cups rice
1 cup Bengal gram
1/2 cup Black gram
1/4 cup coriander seeds
1/2 tbsp cumin seeds
1/2 tbsp white sesame seeds
1/2 tsp ajwain
1/4 cup ghee
Red chilly powder
Pinch of turmeric powder
Pinch of asafetida
Oil (for deep frying)
Salt (as per taste)
Method:
1) In a hot pan, dry roast the rice, Bengal gram and black gram separately until the grains are crispy.
2) Roast the coriander seeds and cumin seeds and grind with above roasted ingredients into fine powder.
3) Heat the ghee in a pan and sauté the ground powder for a minute.
4) Add the sesame seeds, ajwain, salt, turmeric powder, chilly powder and 1/2 cup of boiling water.
5) Knead well the bhajani to make soft pliable dough and place some dough in the chakli mold.
6) Press the piston of chakli mold and make chaklis of desired size.
7) Heat oil in a pan and fry the chaklis until done.
8) Allow to cool and store in airtight containers.
