Horseradish and potato cakes as an appetising snack
For those relaxed weekend evenings when you want to binge on some comfort food, here’s a recipe you must bookmark. It’s easy and uncomplicated with carb-rich potatoes and horseradish that’s spiced with parsley, pepper and salt. Sounds simple, doesn’t it? Horseradish known as Sahijan in Hindi is a famous European veggie which makes this dish a delight. Check out this recipe of horseradish and potato cakes.
Ingredients:
1 onion, grated
3 potatoes, grated
2 sweet potatoes, grated
2 tbsp all-purpose flour
2 large eggs
3 tbsp finely grated fresh horseradish
½ cup chopped fresh fat-leaf parsley
2 tbsp, olive oil for frying
Salt and pepper to taste
Method:
1. In a mixing bowl, grate the onion, potatoes, sweet potatoes and hroseradish.
2. Add the flour, eggs and roughly chopped parsley to the grated vegetables. Season with salt and pepper and combine the mixture.
3. In a frying pan, heat the extra virgin olive oil over medium heat. Spoon two heaped tbsp of the potato mixture into the pan.
4. Fry each potato cake till golden brown approximately for four minutes on each side.
5. Serve the potato cakes with a dip and garnish with fresh spring onions.
