Omelettes are the most comforting food and may I say the easiest to make too? Fifteen minutes is all you need to toss in your favourite ingredients, whip them up with eggs and pour it all into a hot pan. That’s exactly how I do it. Open the fridge and look for ingredients; start with tomatoes, cheese, mushrooms and even olives if you find them. And you already have everything you need. Move to the pantry where you stock your herbs and voila! The burst of flavours will awaken your senses.
But the one thing I never managed to make right was the fluffy, perfectly round, delicious omelettes that I crave. And that’s also what I would ask all the chefs I met. I think practice is what made it finally happen. Here’s what I learnt.
1. You need to keep all the ingredients handy – cleaned and chopped, set on the table ready to be whipped.
2. The next step is to get out a bowl and crack the eggs. Add the spices. I just sprinkle some crushed pepper and salt. If you like a little more spice, try a pinch of chilli powder as well as cumin and coriander powder.
3. Gently whisk the eggs together with the veggies and other ingredients and simultaneously heat the pan.
4. Now this is important. The pan needs to be hot so the omelette cooks well. Add a generous amount of oil, butter or ghee. I use a dollop full of butter and swirl the pan around so that it spreads evenly.
5. Use a non-stick pan, which will keep the omelette from burning especially if you are making one with cheese. Cheese has a tendency to stick to the bottom of the pan and burn.
6. Remember to use the right size pan and not overcrowd it while cooking. When you’ve poured the eggs in the pan spread it evenly on the base by twisting the pan a little and once it is layered well, leave it alone.
7. Let your eggs cook in peace until the edges of the omelette turn brown. When you’ve seen the sides turn crisp, use a spatula to turn it over and get fully cooked. Your fluffy omelette is now done to perfection.
Don’t forget the cheese that’ll melt in to give you a delicious creamy texture. Garnish with herbs if needed and enjoy this yummy, satiating dish.
